X-Rated Cupcakes

Sounds scandalous doesn’t it? Scandalous and alcoholic cupcakes are so perfect for a bachelorette party. Yes- another one. And this isn’t the last. The bride-to-be this weekend is my friend Amy, whom I met in high school. Sometimes I think fate just kept pushing us together, because I can’t really pinpoint when we became the close friends that we are. We took our SATs together, both planned to go to seperate colleges and then somehow both ended up at A&M and eventually roommates. We have a lot of crazy stories between us (and we’re still working on it!). We tend to be the only girls in our group (we’re not in the friend-making business), so in college when we went on trips or whatever the occasion we would split a bottle of X-rated liquour. You’re judging us a little right now, that’s okay. For those who don’t know what X-rated is, is a “fusion liqueur” of vodka, mango, blood orange, and passion fruit. Extremely girly.

I figured X-rated cupcakes would pay tribute to all our nights past, and bachelorette parties pretty much require alcoholic cupcakes. If that wasn’t a rule before…it’s one now. Because X-rated is so fruity and sweet, I went with a basic vanilla almond cupcake to pair with it. While I did add some X-rated to the cupcake, I really intended for that flavor to come out in the frosting. Which the frosting turned out way better than I thought! For your sake I did try to measure when I made the frosting, but I know I added more so it may not be exact.

Vanilla Almond Cupcakes (~24 cupcakes)

  • 2 3/4 cups flour
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 3/4 cups sugar
  • 1 1/2 sticks butter
  • 1 tsp. almond extract
  • 2 tsp. vanilla extract
  • 1 Tbsp. X-rated Liqueur
  • 4 eggs
  • 2 egg yolks
  • 1 1/2 cup buttermilk

Preheat the oven to 350*. In a medium bowl, mix the flour, baking powder, and salt. In a mixer, beat butter and sugar until creamy. Add in the almond and vanilla extracts, and X-rated. Beat in the egg yolks, and then the eggs, one at a time. With the mixer on low, alternately add the flour mixture and buttermilk, starting and ending with the flour mixture.  Divide batter between cups and bake for ~20 minutes.

X-rated Frosting

  • 1 cup shortening
  • 1 1/2 tsp. almond extract
  • 1 1/2 tsp. vanilla extract
  • 1/3 cup X-rated Liqueur
  • 6 cups powdered sugar
  • milk

Mix the shortening, almond and vanilla extract, and X-rated. Gradually add the powdered sugar, adding milk when needed to thin the frosting to the desired consistency.
